Instructions

ON COOKING DAY
  1. Combine the red sauce, eggplant and veggie mix in a ziplock bag. Pack and freeze.
ON THE NIGHT
  1. Defrost and reheat the sauce in the microwave until hot. About 4-5 mins. Serve the sauce on the suggested spaghetti. Top with parmesan to serve. Also fold through salad leaves to serve (if desired).
