Servings 4 people Ingredients 1 eggplant (cut into cubes)2 cup sauce, red (Vegan)1 cup veggie mix2 tsp cheese, parmesan (vegan)1 tomato (diced for topper) Instructions ON COOKING DAY Combine the red sauce, eggplant and veggie mix in a ziplock bag. Pack and freeze. ON THE NIGHT Defrost and reheat the sauce in the microwave until hot. About 4-5 mins. Serve the sauce on the suggested spaghetti. Top with parmesan to serve. Also fold through salad leaves to serve (if desired).
