ON COOKING DAY
Stir the curry powder into the stock broth. Layer the potato, chickpeas, veggie mix and then stock broth into containers in that order. Cool, label and freeze.
ON THE NIGHT
Defrost the hot pot and decant into a large bowl. Reheat in the microwave for 4-5 minutes on high or until hot. Season with salt and pepper. Serve with suggested side.
