ON COOKING DAY
Divvy the chicken and mushrooms and veggie mix into containers. Pour the stock broth in. Cool, label and freeze.
ON THE NIGHT
Defrost the soup in the microwave. Decant into a large bowl and heat on high for 5-6 minutes until hot. Season with salt and pepper and serve.
