Servings 4 people (2 fritters each) Prep Time 10 mins Cook Time 20 mins Ingredients 1 cauliflower half (cut & steamed)1 tbsp curry paste (yellow)1 cup veggie mix1 patty mix portion (vegan)4 tsp hummus Instructions ON COOKING DAY Mash the cauliflower in a bowl. Add a cup of curry sauce, the veggie mix and the patty mix portion. Fry the patties in batches. Cool and pack between layers of baking paper. ON THE NIGHT Reheat the patties in the oven until crispy. Serve with the suggested side dish and top with hummus to serve.
