When freezing veg for the freezer cook until ‘just cooked’ or blanched. This allows for extra cooking time when you reheat the meal. If you overcook veg – the vegetables may go mushy. As a rule of thumb it is better to blanche vegetables before freezing them. I find carrots, broccoli, corn and veg not high in water content are fine to freeze as is.
